I have a USB stick with a bootable installation of Linux on it
I wish to change the boot order ( I believe in the BIOS ) so that instead of booting from the internal SSD it boots from the USB stick attached to one of the USB ports.
Can you take a picture of what options you have when you attempt to change it? Try plugging the USB into a different port and ensuring that it is plugged in and recognized.
It could be that secure boot is stopping you access to boot from usb or your machine does not have the option to boot from usb.
Option 1) Turn off secure boot and see if this then gives an option to boot from usb *NB if you turn off secure boot you will have to repair the current windows boot. You will loose access to windows Option 2) use a boot manager like plop. https://www.plop.at/en/bootmanager/intro.html#:~:text=The%20Plop%20Boot%20Manager%20i s,CD%2FDVD%20or%20from%20USB.
