once again - thanks - and thanks for your patience. I looked at the caps and checked the boot order; unfortunatley (?), I couldn´t find any problems. Furthermore, it seems that it reboots more often then immediatly after the re-install of windows, but this is very subjective.

I did not remove the CPU cooler
Any other ideas? I am very grateful for your help!
Best,
Johannes
I was afraid there is nothing left to check at some point It could very well be that there is an issue with the PSU or the MB which I didnt catch, I guess most of the time the problem sits in front of the computer Attached is the MTB file and two pictures from the BIOS setup, just to make sure I didnt mess anything up there. If we don´t find a solution, I can always bring the computer to professional who doesn´t has to rely on my information over the internet but can look at the system in person/ exchange components.
Best,
Johannes
Took a quick look at the log and spotted a couple of things so suggest we start at the top and work our way through.
The first and most notable issue you are having is with Gigabyte Easy Tune, uninstall it, restart the computer to see if anything changes then post back with an update for us.
Next two issues to address are with Windows Shadow Copy and ESET AV.
Run the AIO repair tool, uninstall ESET, restart the computer, check for Windows updates, run MTB and upload the new log for us.
(1) Download then run the Windows All in One Repair tool from here, disregard the malware guidance but follow the other steps to the letter and in particular ensuring that you first create a new restore point and perform a proper Windows clean boot before running the repair, details for the clean boot here.
(2) ESET removal info here
Windows 8, 8.1 and 10 come with an improved Windows Defender, it offers the same real-time anti-virus/anti-malware protection as Microsoft Security Essentials. Windows Defender also shares the same malware signature definitions as Microsoft Security Essentials, and Forefront Endpoint Protection. Technically, Microsoft Security Essentials has not been renamed Windows Defender, or combined with it in Windows 8, 8.1 and 10.
If any AV product that you have is a paid for version you should always make sure that you have a copy of the product key kept somewhere safe just in case you ever wish to reinstall it.
