I decide between Dell S2721QS and Dell UltraSharp U2721DE. I want the image quality to be the same as MacBook Air (2560x1600).

I would have to actually see the monitor work.
I have gotten stuff that have sounded good on paper and when I put them in use no matter what I do they are garbage.
Best thing I thing for you to do is see if there is a store around that you can see the display working.
