PC Crashes after loading Games (Cyberpunk, BG3, etc)

Hey everyone, this is a very new problem. I have had this PC in this build setting and hardware for over a year now without any issues up until about a week ago.

Previously, all games would play very well. From VR to MMO's. Now, if I load up a game like BG3 or Cyberpunk the system will crash within 20-30 seconds. What is interesting is that a game like WoW (Very CPU bound) runs without any issues at all.

Now sure what may or may have not changed, but I can't seem to win.

DDU ran, installed fresh drivers. Same issue.

FurMark crashes my PC within 10-15 seconds.

Specs:
Windows 10 Home 64-bit
CPU
AMD Ryzen 9 3900X 52 °C
Matisse 7nm Technology
RAM
64.0GB Dual-Channel DDR4 @ 1796MHz (18-22-22-42)
Motherboard
ASUSTeK COMPUTER INC. TUF GAMING X570-PLUS (WI-FI) (AM4) 41 °C
Graphics
38GL950G (3840x1600@60Hz)
S2719DGF (1440x2560@59Hz)
4095MB NVIDIA GeForce RTX 3090 (ASUStek Computer Inc) 36 °C
Storage
1863GB Crucial CT2000MX500SSD1 (SATA (SSD))
931GB Samsung SSD 970 EVO Plus 1TB (Unknown (SSD))
1863GB Samsung SSD 980 PRO 1TB (Unknown (SSD))
1862GB SanDisk Extreme Pro 55AF SCSI Disk Device (USB (SSD))

I do a lot of video editing, and that seems to run without any issue (Adobe Premiere Pro).

Any insights would be great! Going to try and run some tests on my end - but I am more or less stuck.
