New installed HDD problem

I've never seen, or heard of, a secondary drive changing the monitor resolution.
so congrats on that one @Cvetković.
I see from Speccy that the BIOS is version F10, Gigabyte is up to F15a for that mobo - so try upgrading the BIOS.
next, I would remove the HDD, and reinstall a fresh copy of Win10 Pro onto the SSD.
back in early Feburary when the OS was re-installed, that was Win10 Enterprise, which isn't legal for personal use, so there is a question mark over it being cracked or similar.
once a fresh Win10 Pro is working, with updated BIOS and drivers all loaded, then turn off, connect the HDD and see what happens.

Will do when i have time because i have important files on my drives so reinstalling os would be a prob.

Can you open your display settings and take a screenshot of the settings and attach on your next post
To do a screen capture in Windows 10 press the windows key and the print screen button together. It will put the image in Pictures>Screenshots

and when this issue happens, with the 2nd drive connected, it changes your resolution, but can you manually change it back to 1360x768?

what graphics port do you use to connect the monitor to the PC?

In addition to what Bruce advises;
Performance of this computer will be poor as it only has the one stick of RAM meaning that it can only work at circa 1600MHz and Ryzen CPUs really don`t like slow RAM, merchants that advertise the RAM as being 3200MHz should be made to use two sticks of RAM so that dual channel can be enabled and the RAM run at 3200MHz.

when you click on the down arrow next to 1024 x768 do you get the option to ghange to 1360 x 768
But everything in fullscreen like games is ok with 1 drive.
