Solved Issue: Computer hard restarts after time under load

Problem
New build is shutting down regularly when playing games. It takes about 1 hour of playing Civ 6 (on high settings) and about 20 minutes of playing Assassins Creed: Odyssey (max settings) to cause this. The lower intensity of game the longer it takes / doesn't happen at all.

With Civ, it just turns off. With AC:O it will freeze quite a bit (before potential shutdown) and even continue to freeze once the game is turned off. Fans/heat doesn't spike before shut down. Sometimes it even happens within minutes of opening a game.

• Asus Tuf Gaming x570-Plus Mobo
• AMD Ryzen 5 3600
• 32g Ram
• Crucial SSD
• AMD Radeon RX 5700 XT
• EVGA 750 G5 Powersupply (750W)

Troubleshooting

Things I've done:

• Monitored CPU/GPU heat while playing games
  • Really hard to see what is happening at the point of cut off, no heat metrics looked strange
• Turned down graphics settings
  • Lower settings - longer I can play, but its seems counter to what I built the computer for and doesn't actually solve the problem
• Ran stress tests/benchmarks from PassMark
  • Ran 15 min burn in test for all components at max settings - nothing looked strange at all
  • Benchmarks all pass with flying colors and perform well
• Re-seated Ram/GPU
• Ran SSD healthchecks (all results green)
• Ran/checked fan direction and speed
• Updated Drivers / Tried older drivers
• Ran Windows memory test - all clear

Things I haven't done:

• Tried a different GPU (don't have one)
• Tested the power supply in any way (don't know how/think I need expensive tools)
• Re-seated CPU/messed with in any way (scary)

At a loss of where to go next, I figure my next up option is to start sending things back but I really can't tell if this is specifically a GPU, CPU or mobo issue and I'd hate to just try to send everything back. Would appreciate any guidance or ability to pin-point the issue.
