Incredibly Inconsistent WiFi

https://uk.pcpartpicker.com/list/nPKy3t (Windows 10) My PC running wireless via the USB dongle listed that I got a few days ago. I want wired but my step dad refuses any type of wired even powerline ethernet because he "Doesnt trust the electrics".

It is going from the router to an apple airport via ethernet which then connects wirelessly to a booster in the room opposite me (I will call this the "Apple WiFi"). However, we also get WiFi straight from the router which is connected to another booster in the opposite corner of my room to my PC.

Picture of task manager network tab when installing a game on steam although it happens with anything, I got a score of 6.41 for Jitter on the speedtest windows app.

My basic problem is that I get about 4-5 seconds of WiFi at the speed our ISP says we should get which is around 50Mbps and then 3-4 seconds of no internet at all. If I plug in an ethernet cable from the router to my PC I get a consistent 50Mbps with no cut outs at all. If I move my PC to another room, nothing changes. I am mostly connected to the Apple WiFi and so is my brother who has an Xbox (that is further from the router than me although about the same distance from the booster we both use) that he uses for gaming and video calls and says that the WiFi never lags or cuts out. I have tried to look my problem up and have tried almost everything I've seen but nothing has worked so far. If you need anymore information just ask and I will try to give you answers. Thanks.
