I am going to back up my entire drive onto another H/D, just in case, but I want to know the best software to use and also, is there such a app that will regularly check for changes on your current drive and then save them to the current back up?

as stated, File History will do what you want, but it relies on the fact that the external device is always connected. it copies your files to the backup device when it detects they have changed and does that at the predetermined time periods.

System Image Backup (part of Backup and Restore, and yes, available in Win8) will take a snapshot image of the whole drive and store it somewhere.

I haven't used one of those images in the event to restore the contents back to another drive so can't comment on the process.
I used a 3rd party program called Macrium Reflect (also free) for that job.

so, maybe try both and see which suits you best.
also, do a practice run of restoring those system snapshots to test the process, that is after all the reason to backup in the first place. :)
